Rhubarb Rendezvous

50ml of Under the Stairs
20ml of Newton House Garden Rhubarb Syrup
25ml Lemon Juice
Egg White
2 Newton House Garden Raspberries

Garnished with a Rhubarb strip.

Add all ingredients to a shaker and shake hard with ice, strain ingredients into a shaker and shake hard without ice to emulsify liquid. Fine strain and serve straight up into a chilled Coupe Glass or Large Flute.
